Ingredients

  • 1 package Harmony Valley Vegetarian Hamburger Mix
  • 4 medium russet potatoes
  • 4 tablespoons Extra Virgin Olive Oil (EVOO), divided
  • 1 cup broccoli florets, finely chopped
  • 1 cup water
  • 1 cup shredded cheddar cheese, divided
  • ½ cup sour cream
  • ½ teaspoon salt
  • ¼ teaspoon ground pepper
  • 3 scallions, sliced

Directions

  1. Prepare Harmony Valley Vegetarian Hamburger Mix according to package instructions.
  2. Pierce potatoes all over with a fork. Place in the microwave and cook on medium, turning once or twice, until the potatoes are soft, about 20 minutes.
  3. While potatoes are cooking, heat the EVOO in a large skillet over medium heat and brown the Harmony Valley Vegetarian Hamburger Mix until crumbly, about 5 to 8 minutes. .
  4. Remove from the heat and transfer to a large bowl. Increase the heat to high and add the broccoli and water to the pan. Cover and cook until tender, about 4 minutes. Drain and add to the cooked Harmony Valley Vegetarian Hamburger Mix.
  5. Carefully cut off the top third of the cooked potatoes, scoop out the insides into a medium bowl. Place the potato skins in a small baking dish. Add ½ cup cheddar, 1 tablespoon EVOO, sour cream, salt, and pepper to the potato meat and mash to a smooth texture.
  6. Add the scallions and potato mixture to the broccoli and Harmony Valley Vegetarian Hamburger mixture. Stir to combine.
  7. Evenly divide the potato mixture among the shells and top with the remaining ½ cup cheese.
  8. Microwave on High until the filling is hot and cheese is melted, 2 to 4 minutes.
  9. Refrigerate or freeze any left-over filling. Use in a breakfast burrito or make breakfast patties.
