  • 2 Anaheim chilies
  • Cooking spray
  • 1½ pounds tomatillos
  • ¼ cup finely chopped fresh cilantro
  • 1½ teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 3 cups vegetable broth
  • 4 tablespoons olive oil, divided
  • 1½ cups onion, finely chopped
  • ½ cup carrot, chopped
  • ½ cup celery, chopped
  • ½ cup red bell pepper, chopped
  • 3 tablespoons all-purpose flour
  • 4 teaspoons garlic, finely chopped
  • 1 package Harmony Valley Vegetarian Hamburger Mix (prepared according to package directions)
  • ¾ teaspoon kosher salt, divided
  • ½ teaspoon ground black pepper, divided
  • 1 (29 ounce) can golden hominy, rinsed and drained
  • Heaping 1/3 cup sour cream
  • Cilantro leaves


  • Preheat broiler to high
  • Halve, stem, and seed chilies. Place the chilies, skin side up, on a foil-lined baking sheet coated with cooking spray; broil for 5 minutes or until charred. Place the chilies in a paper bag and seal. Let them stand for 15 minutes. Peel and discard the skins
  • Arrange the tomatillos on prepared baking sheet and broil for 14 minutes or until blackened, turning once.
  • Combine the chilies, tomatillos, ¼ cup cilantro, cumin, and oregano in a blender. Add 1 cup broth. Process until smooth
  • Heat a large Dutch oven over medium-high heat. Add 2 teaspoons olive oil. Add onion, carrot, celery, and bell pepper. Sauté for 2 minutes, stirring occasionally. Stir in the flour and sauté for 2 minutes, stirring frequently. Add the garlic and cook for an additional 30 seconds, stirring constantly. Remove mixture to a bowl
  • Sprinkle the prepared Harmony Valley mix with ½ teaspoon salt and ¼ teaspoon pepper. Add 3 tablespoons oil to the pot and sauté the Harmony Valley mix until browned and crumbly (in two separate batches if needed).
  • Add the remaining 2 cups of broth, tomatillo mixture, onion mixture, and hominy to the Harmony Valley mix. Bring to a boil over medium heat.
  • Cover, reduce heat and simmer for 45 minutes, stirring occasionally.
  • Correct seasoning with ½ teaspoon
    salt and ¼ teaspoon pepper.
  • Ladle into bowls and top with 1 tablespoon sour cream and pinch of cilantro leaves.
