Sausage & Potato Breakfast Burrito Recipe

This breakfast burrito is packed with flavor! A hearty way to start the day. If you want a real protein punch add some eggs or tofu too.

Ingredients

  • 1 package HV Vegetarain Sausage Mix
  • 2 russet potatoes, ¼ “ cubed
  • ¼ cup oil + 2 tablespoons
  • 1 small onion, diced
  • 1 tablespoon diced jalapeno peppers
  • 2 cups shredded jack, or cheddar cheese
  • 2 teaspoons soy sauce
  • 1 package flour tortillas

Directions

  1. Prepare HV Vegetarian Sausage Mix according to package instructions
  2. Add ¼ cup vegetable oil to mix, let sit for 10 minutes
  3. Bring 5 cups water to a boil and cook the diced potatoes for about 10 minutes or until cooked through, yet firm
  4. Heat 2 teaspoons oil in skillet over medium heat
  5. Sauté the onion, jalapeno pepper until the onion is soft
  6. Crumble the HARMONY VALLEY VEGETARIAN SAUSAGE MIX into the vegetables
  7. Add the soy sauce, Mix thoroughly
  8. Add the cooked potatoes and sauté for 1 minute
  9. Add the cheese on top of the mix, cover and let cook on low heat for 1 or 2 minutes, or until the cheese is soft and slightly melted
  10. Stir and remove from heat
  11. Top tortilla with mix and roll to make burrito

Alternatives:

  1. Use vegan cheese for a vegan
    burrito
  2. For a moister mix, add 1/8 cup of vegetable broth to the mix before adding the potatoes. The potatoes will thicken the broth.
