  • 1 package Harmony Valley Vegetarian Hamburger Mix, prepared according to package directions
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 4 tablespoons olive oil, separated
  • 1 tablespoon butter
  • 1 medium red onion, thinly sliced
  • 6 ounces shitake or portabella mushrooms, sliced
  • 3 to 4 slices Swiss cheese
  • 3 to 4 leaves red lettuce
  • 3 to 4 gourmet hamburger rolls

  • Add in the salt and pepper and 2 tablespoons olive oil to the Harmony Valley Mix. Form 3 large or 4 medium patties. Set aside.
  • In a medium skillet, melt 1 tablespoon butter with 1 tablespoon olive oil. Add the onions and sauté until translucent. Add the mushrooms and sauté until onions are caramelized and the mushrooms limp and slightly browned. Set aside and keep warm.
  • Heat the remaining olive oil in the skillet over medium heat. Add the patties and cook for 4 minutes. Turn and cook for about 6 to 8 more minutes. Top with the Swiss cheese and cover the skillet. Let the cheese melt over the patties, about 1 to 2 minutes.
  • Melt the other tablespoon of butter in microwave. Brush the top and bottom of the burger buns with the melted butter and broil until edges start to brown.
  • Place a lettuce leaf on the bottom half of the burger bun. Top with a cooked patty and a helping of onion/mushroom mixture. Place top half of bun on top. Serve warm.
