Mini Corn Dogs

This is a different take on the traditional corn dogs. These little bite-sized treats are perfect for any situation: snacks, parties, or even the main dish. They're quick, easy to make and delicious.

Ingredients

Dogs

  • 1 package Harmony Valley Vegetarian Hamburger Mix (prepared according to package instructions)
  • 1 tablespoon corn meal
  • 1 tablespoon soy sauce
  • ½ teaspoon dry mustard
  • ½ teaspoon granulated garlic
  • ½ teaspoon onion powder
  • ¼ teaspoon paprika
  • ¼ teaspoon white pepper
  • Cooking spray

Batter

  • 2/3 cups all-purpose flour
  • ½ cup yellow corn meal
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • ¼ teaspoon baking soda
  • ¼ teaspoon cayenne pepper
  • 1 egg
  • ¾ cup whole milk
  • 5 skewers cut into 7 inch lengths
  • Tongs and line a baking sheet with paper towels for draining the dogs after frying

Directions

  1. Prepare Harmony Valley Vegetarian Hamburger Mix according to package instructions.
  2. Preheat the oven to 375°F.
  3. Add the “Dogs” ingredients together (except cooking spray), mix and refrigerate for 10 additional minutes (20 min. total).
  4. Using about ½ cup of the mixture, form the dogs by rolling out as you would a dough rope, but thicker. Keep the mixture firm while shaping. You should have a 5 inch dog.
  5. Spray the dogs with cooking spray and bake on a baking sheet for 10 minutes, turn and cook for an additional 5 minutes. Remove from the oven and allow to cool for 15 minutes.
  6. Meanwhile, prepare the batter.
  7. In a medium mixing bowl, whisk together the flour, yellow corn mean, baking powder, salt, baking soda, and cayenne pepper.
  8. In a large bowl whisk the egg and milk together. Add the dry ingredients all at once, mixing until just combined. The batter will look like pancake mix. Don’t over-mix and let the batter rest for 10 minutes.
  9. Pour your oil into a skillet (cast iron works best), Dutch oven, or a deep fryer. Heat the oil over medium-high heat until a drop of batter in the hot oil rises to the top (or if you have a thermometer, heat oil to 375°F).
  10. Gently push the skewers up into the center of the dogs. Leave 2 inches of the skewer showing, either top or bottom. Dip the dogs into the batter (or use hands to smear the batter evenly over the dogs).
  11. Carefully place the batter covered dog into the hot oil and cook until the coating is golden brown, about 4-5 minutes. Remove with tongs and place on the paper towels for draining.
  12. Serve with ketchup and mustard.
