Italian Stuffed Squash

Ingredients

  • 1 package HV Vegetarian Hamburger Mix
  • 4 tablespoons vegetable oil, or ghee or butter; plus 3 tablespoon vegetable oil for HV Vegetarian Hamburger Mix
  • 2 Acorn squash, halved lengthwise, seeded and strings scraped clean
  • 3 large leaves Swiss chard, chopped
  • 4 fresh sage leaves
  • 5 teaspoons Herbs de Provence
  • ½ teaspoon salt
  • ¼ teaspoon black pepper, ground
  • ¼ cup onion, chopped

Directions

  1. Prepare HV Vegetarian Hamburger Mix according to package instructions
  2. Preheat oven to 400 degrees
  3. Place a sage leaf into the center of the squash. Dab one tablespoon butter, ghee, or vegetable oil on the sage leaf. Sprinkle the whole cut surface of the squash with salt and a good pinch of Herbs de Provence (approx ½ teaspoon)
  4. Bake in a baking dish for 30 minutes (squash should be tender but not overcooked – al dente).
  5. While the squash is baking, prepare the stuffing.
  6. Sauté onions in 1 tablespoon oil until transparent.
  7. Add the HV Vegetarian Hamburger Mix, salt, pepper, and 3 teaspoons Herbs de Provence. Cook over medium heat for 5 minutes.
  8. Toss in the chard and cook for one more minute.
  9. Remove the squash from the oven and fill the cavity with about a cup of the HV Vegetarian Hamburger Mix mixture.
  10. Bake for an additional 15 minutes.
