HV Sausage and Potato Gratin

Gratin originated in French cuisine and we've converted it to a meatless cuisine with our HV Vegetarian Sausage, mushrooms, potatoes and mouthwatering spices.

Ingredients

  • 2 tablespoons olive oil
  • 1 package Harmony Valley Vegetarian Breakfast Sausage Mix (prepared according to package instructions)
  • 1 tablespoon butter
  • 3 cups chopped onion
  • 4 ounces sliced cremini mushrooms
  • 1 ½ pounds red potatoes, coarsely chopped
  • ½ teaspoon kosher salt
  • ½ cup mushroom broth (Imagine Organics)
  • ¾ cup shredded Swiss cheese
  • Cooking spray
  • 2 tablespoons chopped fresh thyme

Directions

  • Preheat oven to 400°F.
  • Heat the olive oil over medium-high heat in a large skillet. Cook the Harmony Valley Mix until crumbly, about 6 to 8 minutes, stirring often. Remove from pan and set aside.
  • Melt butter in the skillet over medium-heat. Add the onion and sauté until translucent, about 4 minutes. Add the mushrooms and sauté for 6 minutes, stirring occasionally. Add the potatoes and salt. Sauté until browned, about 5 minutes. Stir occasionally.
  • Stir in the Harmony Valley Sausage Mix and mushroom broth. Remove from heat.
  • Spoon the potato mixture into a ceramic or glass baking dish, approx. 11x7-inch coated with cooking spray.
  • Top with cheese. Cover and bake for 30 minutes. Uncover and bake an additional 15 minutes or until golden. Sprinkle with thyme.
