HV Pot Pie

Our pot pie is a savory combination of hearty vegetables and our delicious Harmony Valley Vegetarian Hamburger Mix. It's the perfect recipe for all of the upcoming holidays!

Ingredients

  • 1 package Harmony Valley Vegetarian Hamburger Mix
  • 2 rolled pie crusts (refrigerated store bought, or homemade from your favorite recipe)
  • ¼ pound fresh green beans, ½ inch dice
  • ¼ pound broccoli, rough chop
  • ½ pound fingerling potatoes, ½ inch dice
  • 2 cloves garlic, minced
  • ½ cup onion, chopped
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon ground black pepper
  • 1 teaspoon salt
  • 4 tablespoons butter
  • 4 tablespoons flour (or if you have prepared rue, 1 tablespoon rue)
  • 2 cups vegetable stock
  • 1 tablespoon parsley, chopped

Directions

  1. Prepare Harmony Valley Vegetarian Hamburger according to package instructions.
  2. Preheat oven to 400 degrees Fahrenheit.
  3. Steam vegetables for 8 minutes.
  4. In a medium skillet, sauté garlic and onion in olive oil until translucent.
  5. Add the Harmony Valley Mix to the skillet and brown until chunky, but not crumbly.
  6. Transfer Harmony Valley mixture and vegetables to a bowl.
  7. In a small saucepan melt the butter and add the flour, whisk until the blended and the mixture turns a blond color. Reserve 1 tablespoon rue, refrigerate the remaining 3 tablespoons in an airtight container.
  8. Heat vegetable stock in a small saucepan. Add 1 tablespoon rue and whisk until thickened. Add the pepper and salt and parsley.
  9. Pour the sauce over the vegetable and Harmony Valley mixture.
  10. Use a 9 inch pie pan, a 8 inch round casserole dish, or 2 individual 4 inch ramekins, to make the pot pie (s). Form bottom crust, pour in the Harmony Valley mixture and sauce into the dish, pan, or ramekin, and top with the 2nd crust.
  11. Slit the top crust with a sharp knife. Place the pie on a baking sheet and bake for 30 – 40 minutes or until browned.
  12. Cool for 10 minutes prior to serving.
