HV Chili

This savory recipe is so hearty and delicious. It's the perfect comfort food for the upcoming fall weather. It's easy and quick to make for dinner or large parties and it goes great on everything!

Ingredients

  • 1 package Harmony Valley Vegetarian Hamburger Mix, prepared according to package instructions
  • 3 tablespoons oil
  • 2 14.5 oz. cans Westbrae Natural Vegetarian Organic Chili Beans
  • 1 14.5 oz. can creamed corn
  • 1 14.5 oz. can organic black beans, drained
  • 1 28 oz. Muir Glen Organic Fire Roasted Diced Tomatoes
  • 1 cup diced onion
  • 2 cloves garlic, chopped
  • 1 tablespoon chili powder
  • 2 teaspoons salt, divided
  • 2 teaspoons cumin
  • ¾ teaspoon ground black pepper, divided
  • ¼ teaspoon cayenne pepper (or ½ for spicier chili)
  • ¼ teaspoon cinnamon

Garnish:

  • 1 white onion, small dice
  • 2 cups shredded cheddar cheese

Directions

  1. Heat oil in a medium pan and sauté onions and garlic until slightly translucent.
  2. Add the prepared Harmony Valley Vegetarian Hamburger Mix, ¼ teaspoon black pepper, and 1 teaspoon salt, and cook on medium heat until browned and crumbly.
  3. In a large sauce pot combine the remaining ingredients and set heat to medium high.
  4. Add the Harmony Valley Vegetarian Hamburger Mix to the pot and stir to combine the ingredients thoroughly.
  5. Once the ingredients start to boil, lower the heat and simmer for 30 minutes.
