Harmony Valley Gumbo Recipe

Gumbo is a thick, spicy stew. We made the Harmony Valley Mix into an Andouille flavored sausage to make this dish an authentic and meatless version of a time-honored gumbo recipe.

Ingredients

Andouille Sausage

  • 1/3 cup vegetable oil, separated
  • 1 package Harmony Valley Vegetarian Hamburger Mix (prepared according to package instructions)
  • 1 tablespoon minced garlic
  • ½ tablespoon salt
  • ¼ teaspoon ground black pepper
  • ¼ + teaspoon cayenne pepper (ground red pepper)
  • 1/8 teaspoon dried thyme
  • 1 teaspoon ground paprika
  • ½ crushed bay leaf
  • 1/8 teaspoon dried sage
  • 1 ¼ teaspoon hickory-flavored liquid smoke

Gumbo

  • 3 tablespoons butter
  • 1 cup chopped onion
  • 1/3 cup chopped carrot
  • ½ teaspoon kosher salt
  • ½ teaspoon ground cumin
  • ½ teaspoon ground red pepper
  • ½ teaspoon ground black pepper
  • ¼ teaspoon garlic powder
  • 1 stalk celery, sliced
  • 2 cups chicken broth
  • 1 (16-ounce) package frozen gumbo-style vegetables (contains: celery, onion, bell pepper, corn, and okra)
  • 1 cup water
  • 2 tablespoons all-purpose flour
  • 1 (8-ounce) container crab claw meat, shell pieces removed
  • 2 cups cooked long-grain white rice

NOTE: Omit the crab and substitute vegetable broth to make this dish 100% vegetarian.

Directions

  • Combine ¼ cup vegetable oil, the spices, and liquid smoke to the Harmony Valley Mix. Blend well. Shape the mixture into a rectangular loaf about 1-inch thick. Make sure it is packed tightly.
  • Cut into cubes about 1-inch by 1-inch. Heat the remaining oil in a heavy skillet over medium heat and cook the cubes until they are browned and crispy, (but not burnt), on all sides, about 6 minutes. Set aside.
  • Melt butter in a 3 quart saucepan or Dutch oven over medium heat. Cook 2 minutes or until slightly browned. Add onion and the next 7 ingredients (through to the celery): cook 4 minutes, stirring occasionally.
  • Increase heat to medium-high. Add chicken broth and vegetable blend.
  • Combine 1 cup water and flour, stirring well. Stir into broth mixture. Bring to a boil, reduce heat, add the cooked Harmony Valley cubes and simmer for 18 minutes. Add the crab, and simmer for 2 minutes.
  • Serve over cooked rice.
