Harmony Valley Breakfast Scramble Recipe

Ingredients

  • 1 package HV Vegetarian Sausage Mix
  • 8 oz firm tofu
  • ¼ cup oil + 2 teaspoons
  • 1 small onion, diced
  • 1 teaspoon minced garlic
  • 1 small green bell pepper
  • 1 tablespoon nutritional yeast
  • ¼ teaspoon ground turmeric
  • 2 teaspoons soy sauce
  • 1 package flour tortillas

Directions

  1. Prepare HV Vegetarian Sausage Mix according to package instructions.
  2. Add ¼ cup vegetable oil to mix, let sit for 10 minutes.
  3. Sauté the onion, garlic, and green pepper until the onion is soft.
  4. Crumble the tofu into the vegetables.
  5. Add the yeast, turmeric, and soy sauce.
  6. Set aside cooked tofu in a bowl
  7. Re-heat skillet and add the HARMONY VALLEY VEGETARIAN SAUSAGE MIX.
  8. Sauté until mix is cooked through, about 6 minutes.
  9. Add the cooked tofu and heat through.
  10. Top tortilla with mix and roll to make burrito.

Alternatives: Add vegan cheese; or for vegetarian option, substitute 3 real beaten eggs for tofu and top with cheddar cheese.
