Grilled Stuffed Portabello Recipe

This dish has so much flavor! The grilled mushroom mixed with our Harmony Valley Hamburger Mix is the perfect combination.

  • 1 package HV Vegetarian Hamburger Mix(hydrate & refrigerate according to package instructions)
  • 6 portabella mushrooms (remove the gills and stem, discard)
  • 2 tablespoons plus 1 tablespoon olive oil
  • 1 tablespoon garlic, chopped
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ¼ cup bread crumbs
  • Handful basil leaves, chopped (about 8 leaves, plus 6 more for garnish)
  • 1 large tomato sliced into 6 slices
  • 8 ounces Smoked Mozzarella or Smoked
  • Provolone cheese, sliced into 6 slices


  1. Add 1 tablespoon olive oil to a non-stick pan and brown the prepared HARMONY VALLEY VEGETARIAN HAMBURGER MIX and garlic until crumbly (about 8 minutes), set aside.
  2. In a medium size bowl, combine the basil, bread crumbs, salt and pepper. Toss in the cooked HV Vegetarian Hamburger Mix
  3. Brush the portabella mushroom tops with olive oil and place on a pre-heated grill over low heat for three minutes. Remove from the grill and stuff each cap with ¼ cup mix, drizzle each with olive oil, top with tomato slice and slice of cheese.
  4. With cover on, grill over low flame for about 10 minutes or until cheese is melted.
  5. Top with fresh basil leaf and serve.
