Crust Less Quiche Recipe

This quiche is light and airy. It is a crust less quiche and is perfect for an easy summer breakfast or lunch.

  • 3 cups half and half
  • 10 eggs, beaten
  • 1 Bag Harmony Valley Vegetarian Sausage
  • 4 tbsp green onions
  • 1 cup broccoli florets
  • ½ cup diced red peppers
  • 1 tsp black pepper
  • 1 tsp salt
  • 2 tsp minced garlic
  • 1 cup grated cheese


  1. Preheat oven to 400 degrees
  2. Grease 6 ramekins or pie pan
  3. Hydrate HV Mix as directed on package
  4. Beat the eggs with the cream, add salt, pepper and cheese mix until well incorporated
  5. In a small sauté pan, cook the sausage, add onions, broccoli, peppers, salt & pepper and garlic.
  6. Sauté until the peppers are tender
  7. Remove from heat and allow to cool
  8. Place HV sausage mixture in pie pan or ramekin, pour the egg/cream mixture over the top and fill to the very top
  9. Bake at 400 degrees for 25-30 minutes or until the top is golden and puffed up
  10. Remove from oven and cool for 5 minutes before serving
