Classic Meatloaf

Ingredients

  • 1 package HV Vegetarian Hamburger Mix, prepared according to package instructions
  • 1 cup finely chopped onions
  • ¼ cup quick-cooking rolled oats
  • 1 cup ketchup
  • ¼ cup EVOO (Extra Virgin Olive Oil)
  • 2/3 cup finely chopped parsley
  • 2 eggs, lightly beaten
  • ½ teaspoon ground thyme
  • 2 teaspoons salt
  • ½ teaspoon ground black pepper

Directions

  • Preheat oven to 350 degrees Fahrenheit, and lightly grease a 9 inch x 5 inch loaf pan.
  • Combine the prepared HV Vegetarian Hamburger Mix in a large bowl along with the remaining ingredients.
  • Knead the mixture with your hands until everything is well blended.
  • Fill the loaf pan with the mixture and mound the top.
  • Drizzle (or squeeze out) about 2 tablespoons of ketchup onto the top of the loaf.
  • Bake for 45 minutes or until an instant-read thermometer inserted into the center of the loaf reads 160 degrees Fahrenheit.
  • Let the loaf rest for about 10 minutes before cutting and serving.
