Artichoke Fritters Recipe

  • 1 package HV VEGETARIAN HAMBURGER MIX (prepared according to package directions)
  • 1 14-oz can artichoke hearts, drained
  • 1 tablespoon minced garlic
  • 3 leeks, rinsed well and thinly sliced up to light green part
  • 4 tablespoons EVOO (extra virgin olive oil), divided into two equal parts
  • ¾ cup flour
  • ½ cup Parmesan cheese, grated
  • ¼ cup parsley, minced
  • 1 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 teaspoons crushed red pepper
  • 1 tablespoon honey
  • Zest of one lemon
  • Juice of one lemon
  • 2 eggs, beaten
  • Vegetable oil for pan-frying
  • 1 cup sour cream
  • ½ cup feta cheese, crumbled
  • ½ teaspoon salt
  • 1 tablespoon mayonnaise


  1. Sauté HV Vegetarian Hamburger Mix in 2 tablespoons EVOO until cooked through and crumbly.
  2. Preheat oven to 350 degrees
  3. Drain, rinse and chop artichoke hearts.
  4. Combine leeks, garlic, and 2 tablespoons EVOO in a small bowl; microwave for 3 minutes, or until softened.
  5. Add leeks and garlic to the artichoke hearts.
  6. Stir in flour, HV Vegetarian Hamburger Mix, Parmesan cheese, parsley, black pepper, Italian seasoning, crushed red pepper, honey, lemon zest and juice.
  7. Stir beaten eggs into mixture. Chill in refrigerator for one hour (or more if you are cooking later).
  8. Heat about 1” oil in shallow skillet.
  9. Shape mixture into 12 to 18 fritters and fry for 2 minutes on each side. Set on paper towels to drain. Place on baking sheet and finish off in oven for 10 minutes.
  10. Combine sour cream, feta cheese, and salt in blender or food processor and blend together until creamy.
  11. Serve dollop of feta sauce with each fritter.
